Well, at a high level the principle is that you can consume high amounts of food which DO NOT contain carbohydrates. The benefit is that your body turns carbohydrates into sugar and ultimately, fat. Basically, by significantly reducing your carbohydrate intake, you can consume large amounts of food without really adding any extra fat to your diet. Your body begins "feeling" full because your diet does not contain carbs and your ultimately eat less while have less food convert to fat. The "Net Net" here is that you feel fool without having as much substance in your system.

Give Atkins a try - Eat all the eggs, bacon, steaks, cheese, and butter you desire for just a week; without consuming milk, fruit, juices, grain, bread, or basically carbs. You will find that after about a week, you feel full without eating as much food.
